The new developments center on The Kat Florence Reserve, a 100-acre sanctuary of protected forest and riverfront along the Elora Gorge. Designed as a low-impact retreat for select guests, the property offers guided nature walks and private picnics, ensuring the land remains undisturbed by commercial development. Complementing this is the Imperial Jade Manor, an Italianate Revival residence that now serves as an elite accommodation option featuring a six-figure stone hot bath and the services of Canada’s first Top Chef winner, Dale Mackay.
Beyond the real estate additions, the hotel is elevating its culinary program to include nightly tasting menus prepared by a rotating roster of world-class chefs. The fleet now features Neill Anthony, a private chef known for his work with global royalty and celebrities. These dinners are hosted in intimate settings, including the newly opened Library on the River. Inside the main hotel, the historic 1848 limestone walls have been transformed into a rotating gallery, showcasing multi-million-dollar gemstones—including a 424.8-carat tanzanite—that are displayed as part of the hotel’s living interior rather than behind traditional museum glass.
